Dehydrated chives are dried chives that have had all of their moisture removed. This process allows the chives to be stored for longer periods of time without spoiling.
Dehydrated chives are typically made by harvesting fresh chives and then drying them using a dehydrator or an oven set to a low temperature. The chives are usually chopped or sliced before drying to allow for more even drying.
Dehydrated chives do contain many of the same nutrients as fresh chives, such as vitamins A and C, as well as minerals like calcium and potassium. However, the dehydration process can cause some of the nutrients to be lost, so fresh chives are generally considered to be more nutritious.
